I don’t know how for whom, but for me sauerkraut or pickled cabbage is one of those products that never get bored. That is why you can always find at least one jar of snacks in the refrigerator. And I also like the fact that you can cook food according to different recipes, the collection of which is replenished with 3-5 new excellent options every year. And today I will share my favorite ways to cook pickled vegetables in a matter of hours.
Quick pickled cabbage with carrots and garlic
A simple recipe that will appeal to many, if not everyone. Cabbage can be served 10 hours after placing it in the jars.
Ingredients:
- 2 kg of white cabbage;
- 200-300 g of carrots;
- 1 head of garlic;
- 1 liter of water;
- 200 g granulated sugar;
- 2 tbsp. l. salt;
- 2 tbsp. l. vinegar essence.
Preparation:

Slice the cabbage into pieces that are comfortable to grip while slicing.
Prepare the cabbage

Chop the vegetable using a grater or a sharp, wide-bladed knife.
Slice the vegetable thinly

Transfer the cabbage to a large container, add the coarsely grated carrots and chopped garlic. Stir all vegetables.
Mix prepared vegetables
- Mix water with sugar and salt and bring the mixture to a boil. Pour vinegar essence into a pot with pouring and immediately remove it from heat.

Pour the vegetable mass with hot marinade, place under oppression and leave for 10 hours at room temperature.

In this version, the cabbage turns out to be very bright and amazingly aromatic.
Ingredients:
- 350 g cabbage;
- 3 bell peppers;
- 1 sour apple;
- 1-2 carrots;
- 1 tbsp. l. salt;
- 1 tbsp. l. Sahara;
- 3 peas of allspice;
- 3 tbsp. l. 6% vinegar;
- 150 ml of water.
Preparation:

Cut the cabbage into thin strips and place in a large bowl or bowl.

Cut the peeled carrots and 3 small peppers into strips (thicker than the cabbage). Cut the apple into quarters, remove the core. Transfer everything to a bowl of cabbage.

Quick pickled cabbage with beets
Lovers of Korean cuisine will definitely appreciate the taste of cabbage marinated with beets and aromatic spices.
Ingredients:
- 2–2.5 kg of cabbage;
- 200 g of beets;
- 200 g carrots;
- 200 g of garlic;
- 1.2 liters of water;
- 100 g of refined sunflower oil;
- 150-200 g of sugar;
- 1.5 tbsp. l. salt;
- 150 ml of 9% vinegar;
- 1 tsp ground coriander;
- ground black pepper and other spices to taste.
Preparation:
- Cut the cabbage heads into quarters, remove the stumps. Cut the cabbage into large squares and / or triangles 2–3 cm long.

Cut the beets and carrots into long cubes, the garlic cloves into thin slices.
Prepare vegetables

Place all vegetables in a large saucepan, alternating with kale and other ingredients.
Place vegetables in layers in a suitable container.
- Prepare the marinade by bringing water to a boil with added sugar, salt, sunflower oil and spices. Add vinegar to the finished filling.
- Pour the hot liquid into a pot of vegetables.

Cover the piece with a plate and place a large jar of water or other weight on top.

For those who, for whatever reason, do not use vinegar in cooking, the option of pickling cabbage with citric acid is useful.
Ingredients:
- 0.5 kg of white cabbage;
- 1 carrot;
- 3 cloves of garlic;
- 1/2 tbsp. l. coriander seeds;
- 2 bay leaves;
- 1-2 pinches of ground black pepper;
- 1 tbsp. l. salt;
- 1.5 tbsp. l. Sahara;
- 2 tbsp. l. refined sunflower oil;
- 1/2 tsp citric acid;
- 0.5 l of water.
Preparation:

Combine finely chopped cabbage with grated carrots and garlic passed through a press. While mixing, lightly squeeze the mixture with your hands so that the vegetables let the juice flow.
Chop and mix vegetables

Tamp the cabbage into a 1-liter jar, periodically adding coriander seeds and black pepper between the layers. Add laurel leaves.
Transfer the vegetable mass to a jar, adding spices

Bring water with salt and granulated sugar to a boil, add citric acid, turn off the stove and pour the marinade into the jar of cabbage.

After 12-16 hours of infusion in a warm place without direct sunlight, the snack is ready.
