"Mother-in-law's tongue" from zucchini: recipes for the winter
Judging by the anecdotes, mother-in-law is oh, how sharp on the tongue. Just give me a reason, they will give pepper to the unlucky son-in-law! This must have been the way the author of this recipe reasoned, thinking of how to christen a spicy vegetable salad prepared for the winter. Or maybe the association was prompted by zucchini cut into thin layers - neither give nor take the languages. Be that as it may, and the burning appetizer "Mother-in-law's language", along with the funny name, quickly went to the people and to this day remains one of the favorite dishes of Russians. If you are not yet familiar with it, we advise you to quickly correct this annoying oversight.
Appetizer "Mother-in-law's tongue" from zucchini: classic version
Usually, for preservation, it is advised to take young zucchini with a thin skin, which can not even be peeled off due to its softness. With "Mother-in-law's tongue" the situation is somewhat different, here it is permissible to use more mature fruits with dense pulp. But by no means overripe, harsh and dry, so choose carefully.
You will need:
- 3 kg of zucchini;
- 3 kg of tomatoes;
- 500 g bell pepper;
- 1-2 pods of hot pepper;
- 5-8 cloves of garlic;
- 250 ml of vegetable oil;
- 100 ml vinegar 9%;
- 6-8 tsp Sahara;
- 5-6 tsp salt.
Cooking.
-
Wash tomatoes and bell peppers and cut into small slices. At the same time, remove the stalk and seeds from the pepper.
The appetizer will turn out colorful
-
Pass the prepared vegetables through a meat grinder or beat them with a blender until they become a thick gruel, and then transfer them to a saucepan and put on low heat.
Beat the vegetables until smooth
-
While the tomato paste is boiling, peel the zucchini and cut the flesh into thin slices.
And here are the future tongues
-
Chop hot peppers at random. One detail: if you want a truly "fire" snack, leave the seeds in place, or if you want to make a moderately spicy salad, remove them.
It is better to deal with hot peppers with gloves - even a microscopic wound on the hand will react very painfully to it
-
Peel and chop the garlic.
Mother-in-law's tongue is a sharp thing
-
Put zucchini tongues, salt and sugar into the boiling paste.
The zucchini should be soft but keep their shape
-
Leave everything to simmer on the fire for another half hour, and then add garlic, hot peppers and vinegar.
A few final touches left
-
Wait another 5 minutes, put the salad in pre-sterilized jars and seal for the winter.
You can put the snack away for storage
This year I had a lot of zucchini, little patience, and I wanted to make the "tongues" thinner and softer. Therefore, the knife was soon retired, and a potato peeler took its place. As a result, the zucchini was cut quickly, evenly and exactly as desired. It is worth noting that the fruits were young and tender, so they gave in to the potato peeler without any problems.

Option for a hurry: lazy "Mother-in-law's tongue"
If you are not in the mood to waste time plating zucchini into slices, but you want to cook a snack, choose its simplified version. Even if the shape of the food does not meet the classical requirements, its taste will not deteriorate from this.
You will need:
- 2 kg of zucchini;
- 250 ml tomato paste;
- 400-500 g bell pepper;
- 1-2 pods of hot pepper;
- 1 head of garlic;
- 50 ml vinegar 9%;
- 2/3 cup vegetable oil;
- 2/3 cup sugar;
- 500 ml of water;
- 4 tsp salt.
Cooking.
-
Peel the courgettes and cut into cubes.
Young zucchini need not be peeled
-
Slice the bell peppers as you like, removing the seeds and stalk.
Pieces can be large
-
Chop hot pepper. The seeds are cleaned from it at will.
The appetizer will be spicier with seeds.
-
Peel the garlic.
The amount of garlic can be changed to your liking
-
Pass the vegetables through a meat grinder or blender.
This time, you do not need to cut the zucchini into slices.
-
Dilute the tomato paste with water, season with salt and sugar.
The role of tomatoes will be taken over by tomato paste
-
Add oil, vegetable crumbs and send everything to the stove, remembering to cover the pan with a lid.
From time to time, the lid must be removed to gently stir the brew
-
Simmer the appetizer for half an hour over low heat. Then pour in the vinegar, let the paste simmer for another 5 minutes and you can pour it into sterilized jars. All that remains is to clog the lazy "Mother-in-law's tongue" for the winter.
Or you can put a snack in a salad bowl and serve
If you don't want to make the appetizer too spicy, halve the amount of garlic and cross out one pepper pod from the recipe.
Ready-made "Mother-in-law's language" is stored for about a year in jars sealed with iron lids and for 2-3 months - under nylon lids. For about the same amount (2-3 months), the snack will remain fresh even if you cook it without vinegar. And the famous Tongue can be eaten right away by serving it to the table along with meat, potatoes or vegetables. Spicy and spicy, it will be good with almost any dish.
