  • 1 well-fed chicken;
  • 200 g beef liver;
  • 100-150 g of peeled pistachios;
  • 1 onion;
  • 50 ml dry white wine;
  • 100 ml cream;
  • 1 tbsp. l. wheat flour;
  • 1 tsp butter;
  • 2-3 tbsp. l. vegetable oil;
  • a pinch of coriander powder and cumin seeds;
  • salt and pepper to taste.

  1. Cut the chicken across the breastbone and cut so that the skin and fillets remain intact. All bones must be removed. Drizzle with dry white wine and rub with soft butter. Sprinkle with salt and pepper to taste.
