Raw potato pancakes: a step by step recipe

The peculiarity of these potato pancakes is that they are thin and elastic, which means that they can be combined with any fillings. For them you will need:

  • 250 g potatoes;
  • 1 onion;
  • 1 tbsp. flour;
  • 1 egg;
  • 2 cloves of garlic;
  • 1/2 tbsp. milk;
  • 1/2 tbsp. water;
  • 2 tbsp. l. vegetable oil;
  • salt and pepper to taste.

We start cooking.

  1. Peel potatoes, onion and garlic, cut everything into small pieces. Place everything in a blender bowl to blend.

    Grind the peeled vegetables in a blender into gruel

  2. When the food in the blender reaches a gruel consistency, add the egg and milk to it. Whisk well.

  3. Add flour with spices, mix until smooth. Then pour in the oil, boiling water - this will make the dough thinner, and beat for the last time.

  4. Pour the dough into the pan in a thin layer and fry on both sides over medium heat for literally 1.5 minutes. Remove carefully with a wooden spatula and place on a plate.

    Place the finished pancakes in a separate bowl.

By the way, the frying time can vary depending on how much crispy potatoes you like. In any case, the pancakes should have a light crust, then you can fry for a little more than a minute. Or, fry for 2 minutes for a more intense crust, but this may make the pancakes dry. Don't worry, they will soften on a plate and will be easy to wrap around the filling.

If you have a non-stick frying pan, you do not need to pour oil under the dough.

What filling to put in pancakes

To make the pancakes even tastier, you can add to the dough:

  • finely chopped fresh herbs;
  • chopped dry mushrooms, pre-soaked;
  • minced meat fried with onions;
  • grated hard cheese.

Also, any of these products can be distributed over the pancake, greased with your favorite sauce on top and rolled up in a tube or envelope.
