The saying that the first pancake always comes out lumpy can be heard very often. However, it's not all bad. Popular wisdom, although right, there are still exceptions. I say this from my own experience, because from the very first attempt to cook pancakes, I was able to enjoy the delicious and very neat golden round. My sister taught me how to fry wonderful fishnet pancakes in milk. At the same time, she did not show me the order of actions, but simply said what I had to do. As it turned out, following a few simple rules, you can avoid mistakes and become a real master in making pancakes.
- 3 tbsp. milk;
- 3 eggs;
- 1.5 tbsp. wheat flour;
- 1-2 tbsp. l. granulated sugar;
- 1/2 tsp salt;
- sunflower oil;
Combine eggs with granulated sugar and salt in a suitable container.
Adjust the amount of sugar to your liking
While stirring the egg mass, pour half the milk into a bowl and stir the food until the sugar and salt crystals are completely dissolved.

Sift flour into a bowl with future dough.
Sifting will enrich the flour with oxygen, and the pancakes will be more airy.
Stir all ingredients thoroughly to avoid lumps.
Mix eggs and flour well so that there are no lumps in the dough.
Pour the remaining milk into a bowl and stir.
Use room temperature milk to make pancake dough
Add 2 tablespoons of refined sunflower oil to the dough and mix the resulting mass well one last time.
The finished dough has a homogeneous structure, not very liquid and viscous
- Place the bowl of dough in the refrigerator and let sit for a third of an hour or more.
- Heat the skillet to a light smoke.
- Use a silicone brush to brush a little sunflower oil on the pan.
Slightly tilting and turning the pan in a circle so that the mixture is evenly distributed over the entire surface of the dish, pour a portion of the dough into it.

- As soon as there is no batter left on the surface of the workpiece, and the edges of the pancake begin to lag behind the pan, gently turn it over with a fork and spatula.
