It would seem that it is easier - to take and fry pancakes? It turns out that this activity is quite varied. And even dough for pancakes can be of several types: yeast, yeast-free and made from pancake flour. All of them have their own characteristics, both in preparation and in taste.
For yeast dough pancakes you will need:
- wheat flour;
- eggs;
- salt, sugar;
- yeast;
- vegetable oil;
- butter;
- milk.
Heat the milk and dissolve 40 g of yeast in it. Leave for a while, and in the meantime, break 2 eggs, sugar and salt into a bowl, combine with milk and stir, but do not beat.
Now add flour. First, decide how thick the pancakes should be, because it directly depends on the thickness of the dough. The dough should not be too thin either, otherwise you will not be able to turn the pancakes.
Fry the pancakes in vegetable oil and grease with butter as soon as removed from the pan.
A yeast-free dough will require the same foods, except for yeast. "Lunar landscape" on the surface of the pancakes is achieved by using soda slaked with vinegar or a special baking powder. Dry baking powder should be added to the flour, and soda to the finished dough. Stir especially thoroughly, preferably with a mixer or blender, and you can immediately start baking.
Special pancake flour already contains baking powder and egg powder, so you only need to add milk, salt and sugar for the dough.
So, the pancakes themselves are ready. Now we just have to decide what will be their filling. And this is a huge scope for imagination! You can stuff the pancakes with meat, mushrooms, vegetables, fish, fruits and sweets.
Pancakes stuffed with potatoes and spicy sauce
Such an unusual filling - mashed potatoes with sour cream and herring sauce - will make your pancakes simply extraordinary.
So, for the filling itself you will need the following products:
- ½ kg of potatoes;
- 2 medium onions;
- ½ glass of milk;
- 2 tbsp. l. butter.
For the sauce:
- 1 lightly salted herring;
- 150 g low-fat sour cream;
- green onions;
- lemon juice.
We already have pancakes, so let's start filling:
- Boil potatoes and mash them.
- Fry finely chopped onion until golden brown, put in mashed potatoes, add milk and butter.
- Stir and wrap the filling in the pancakes the way you're used to.
- Fry the stuffed pancakes in vegetable oil until crusty.
- To prepare the sauce, grind the herring fillets with a meat grinder or blender. It is better to take not a finished fillet, but a whole herring, and carefully cut it.

Combine the mass with sour cream in the proportions that suit you best. More sour cream will make the sauce taste tender, herring more spicy. Add lemon juice and stir.
Serve the stuffed pancakes hot, sprinkle with sauce on top and sprinkle with green onions.
Baked pancakes stuffed with cheese and ham
Cheese and ham perfectly complement each other and any dish. And pancakes filled with such a filling are simply delicious!
Prepare the filling for about 6-8 pancakes. We need:
- 150 g of boiled rice;
- 150 g onions;
- 3 boiled eggs;
- 250 g ham;
- 100 g of cheese;
- vegetable oil;
- salt, pepper, herbs to taste.
- Finely chop the greens, grate the eggs. Mix this mass with rice, salt and add spices.
- Put this filling on a pancake, roll up. Arrange the wrapped pancakes in a baking dish.
- Cut the onion into half rings and fry it. Add the diced ham to the pan and simmer.
- Grate the cheese. Put ham and onion on pancakes in a pan, level the mass and sprinkle with cheese. Send the dish to an oven preheated to 180 degrees for 25 minutes.
The pancakes are fully cooked when the cheese is melted and baked until golden brown. This is not only a worthy decoration for a festive table, but also a great separate dish for every day for the whole family.
Pancakes stuffed with sweet curd filling
Well, what kind of table, and even Shrovetide, without sweets? After all, children also want to join the festive atmosphere. We offer you a recipe for the most delicate pancakes with cottage cheese and two sauces.
So, let's prepare the filling. Products are designed for 5 pancakes:
- cottage cheese - 250 g;
- egg yolk - 1 pc;
- sugar - 2 tablespoons
Mix the ingredients into a homogeneous mass and fill the pancakes with it. Now you need to prepare the first sauce. For it, take and mix the following thoroughly:
- cream or sour cream - 200 g;
- egg yolks - 2 pcs;
- icing sugar - 1 tbsp. l.;
- starch - 1 tsp;
- vanillin.
Put the pancakes stuffed with curd mass in a greased pan and pour the first syrup. Place in the oven at 180 degrees for 20 minutes.
While the pancakes are baking, prepare a second sauce. Take for him the zest of half an orange, the juice of a whole orange, a teaspoon of butter and two tablespoons of sugar. Melt butter and add sugar to it. When it dissolves, add the chopped zest and pour in the juice. Heat the sauce for a while, stirring occasionally, until thickened.
Remove the pancakes from the oven and pour the orange sauce over them. Enjoy your meal!
Creative chocolate pancakes - beauty and pleasure
Try to make such pancakes, which can be served either stuffed with cottage cheese, berries, fruits, or as a separate dish. Their difference from the rest is that when baking, you can create any patterns on the surface of the pancake.
Take the following foods:
- 3 glasses of milk;
- 3 eggs;
- 3 tablespoons of vegetable oil;
- 2 tablespoons of sugar;
- 300 g flour;
- a pinch of salt;
- 2 tablespoons of cocoa.
- Beat eggs, salt and sugar in a blender, pour in a glass of milk, beat again. Stir in the flour, and while whisking, add the remaining milk. A blender will help you make a smooth dough.
- Pour about a third of the mass into a separate bowl, and add cocoa to the remaining 2/3 and mix thoroughly.
- Preheat a skillet and pour in the vegetable oil. Start baking. This is where you show your imagination. Pour a little dough with cocoa into the pan (just as much as you need for one pancake), and while it is baking on one side, take the white dough with a teaspoon and draw arbitrary patterns on the outside. Then turn over and fry on the other side.
- When stuffing or placing on a plate, place them with the patterned side up.

- Place the pancake on a flat surface and brush on one side with cream cheese. Place a few slices of fish, about 2-3, depending on the size of the pancake and fish pieces. Sprinkle with herbs.
- Roll the pancake into a tube, divide into 2 parts. If you want the dish to look very Japanese, cut the pancake into several smaller pieces so that they look like sushi.
- Put the pancakes stuffed with salmon and cheese on a plate, garnish with herbs. As an addition, it can be served with avocado and sweet and sour sauce.
