There are many recipes on how to marinate a kebab. They use a variety of ingredients, seasonings and additives. We offer several interesting options, from classic to original.

Marinade in vinegar

This type of marinade is considered traditional. It seems that it is easy to prepare, because it only needs:

  • 3-4 onions;
  • 100 ml of 9% vinegar;
  • 200 ml of water;
  • salt and dry spices to taste.

And this is for 2 kg of pork. But the problem is that the vinegar must be topped up very accurately, and not be mistaken with the aging time of the meat, otherwise its taste will become unpleasant.

Despite its apparent simplicity, vinegar marinade requires careful handling.

Pour the vinegar diluted with water into a bowl of meat mixed with spices, onions and salt. Pork pieces should be completely covered with marinade. Leave in the refrigerator for 3 hours.

Kefir marinade

You probably know this phrase: "salt, pepper, seasonings - to taste." For example, I really love spicy and spicy food, so I usually add spices from the heart. But as experience has shown, this is not suitable for barbecue: it becomes as if it tastes artificial. Therefore, it is better to add a couple of seasonings in small quantities.

It is not necessary to use vinegar as a base for the marinade to soften the meat. Kefir copes with this task perfectly.

You will need:

  • 1 bunch fresh cilantro
  • 1 liter of high fat kefir;
  • 3 fresh onions;
  • 1.5 kg of pork.

Cooking the marinade.

  1. Cut the peeled onions into rings about 0.5–0.8 cm thick. Rinse the cilantro well, dry and chop finely.
  2. In a deep, wide container, lay the meat on the bottom in a layer, onion and cilantro on top. Season with a little pepper.
  3. Pour in the kefir so that it completely covers the pieces of meat. Cover with a lid and refrigerate at least overnight, or better for a day.

Soy sauce and honey as a marinade

In oriental cuisine, this version of the marinade has perhaps the most interesting taste and aroma.

You will need:

  • 1.6 kg of pork;
  • 2 tablespoons of purchased mustard;
  • 4 cloves of young garlic;
  • 5 tbsp. l. soy sauce;
  • 3 tbsp. l. natural honey;
  • 5 g coriander;
  • 5 g of ground black pepper.

In such a marinade, the meat is perfectly fried, covered with a crispy crust, under which juiciness and softness are well preserved.

  1. Stir the sauce and honey in a bowl so that the mixture is uniform.
  2. Peel and chop the garlic as finely as possible. It is advisable to do this with a knife, but you can use the press. Add the garlic to the soy-honey mixture and mix again.
  3. Season the marinade with spices. Since soy sauce is quite salty by itself, it is not necessary to add salt, it will be enough to add salt to the meat right before cooking.
  4. Place the pork in a bowl and place under oppression. Refrigerate for 24 hours.

Marinade with lemon

Lemon juice is a great and healthy alternative to vinegar. It will perfectly saturate the meat and give it an exquisite flavor. But in such a marinade you need to put more onions.

Take these products:

  • 1.2 kg of pork;
  • 510 g onions;
  • 2 large lemons;
  • 5 g of black and red ground pepper;
  • 3 g curry and coriander peas;
  • salt to taste;
  • 1 tsp turmeric.

Prepare the meat and proceed.

  1. Mix the pork with all the spices immediately. Do this with your hands, kneading pieces of meat.
  2. Remove the zest from the lemon using a grater and add to the meat. Mix everything again so that the zest spreads evenly over the mass.
  3. Cut the peeled onions into medium rings, add to the marinade and press down slightly with your hands: the onion should let the juice flow. Leave the blank for an hour, then squeeze the juice from the lemons on top. Let the meat soak for 5 hours.

If you are short on time to prepare the marinade, then sparkling mineral water will help you. It would seem that this is just water, but in fact, its bubbles, saturated with carbon dioxide, do an excellent job of softening meat fibers, and onion juice will speed up this process.

You will need:

  • 1.2 kg of pork;
  • 1 pack of barbecue spices (can be bought at the store);
  • 1 liter of mineral water with gas;
  • 3 onions.

Cut the onion into rings or half rings, remember slightly with your hands so that it begins to let the juice flow. Place it on the bottom of a saucepan, spread the chopped meat on top, salt and season with spices.

This sauce is suitable for almost any type of meat. For 1 kg of pork you need:

  • 2 tbsp. pomegranate juice;
  • 0.5 tbsp. vodka;
  • 1 bunch of cilantro;
  • 1 bunch of mint;
  • 1 onion;
  • 1 tsp ground pepper;
  • 1 tsp salt.

Chop greens and onions into large pieces, mix well with pepper and salt. Rub the sliced meat with this mixture. Place the pork in a deep bowl and pour in the juice and vodka. Marinate for 8-10 hours.
