You will need:

  • 300 g of cottage cheese;
  • 1 egg;
  • 3 tbsp. l. Sahara;
  • 100 g flour;
  • 1 pinch of salt;
  • 1 tbsp. l. lemon juice;
  • ½ tsp. soda;
  • 1 tsp vanilla sugar;
  • 2 tbsp. l. sour cream.

For cheesecakes, it is better to take dense cottage cheese, which mixes well and does not crumble. And you can replace sour cream with any yogurt.

  1. Combine the egg, cottage cheese and sugar in a deep bowl, salt. Mix until smooth with a mixer or blender.

It is believed that adding semolina instead of flour to the dough makes baked goods lighter and more elastic. Personally, I often use semolina not only in dough, but also for batter. Not only the consistency of the dough changes, but also its taste, and in a more pleasant way.

In addition, raisins, berries or other dried fruits can be added to these cheesecakes.

Take the following foods:

  • 400 g of cottage cheese;
  • 1 egg;
  • 3 tbsp. l. sour cream;
  • 1 tbsp. l. softened butter;
  • 3 tbsp. l. semolina;
  • 3 tbsp. l. Sahara;
  • ½ tsp. vanilla sugar;
  • 1 tsp baking powder;
  • 1 pinch of salt;
  • 2 tbsp. l. raisins.

If you decide to add berries instead of raisins, take fresh or thawed, well-dried. Excessive moisture, evaporating during baking, can spoil the shape of the cheesecakes. Dried apricots and prunes should preferably be cut into small pieces.

So let's get started.

  1. Put cottage cheese, semolina, sour cream, butter, salt, sugar, baking powder in the bowl of a food processor, blender or mixer, add vanilla sugar and beat in an egg. Stir until smooth.

  2. Transfer the curd mixture to another bowl and add the raisins to it. It must first be washed in hot water, allowed to swell a little and dried with a napkin or towel. Stir again to distribute the raisins evenly throughout the mass.

  3. Leave the dough for 20 minutes to swell the semolina. Then place it in small muffin tins. Each container should be no more than half full.

One of the most popular desserts in Ukrainian cuisine is the Lviv syrnik, which is indispensable for the menu of any restaurant or coffee house in Western Ukraine. We offer you a simplified recipe, but if you wish, you can supplement it with candied fruits, nuts, dried fruits or berries at your discretion.

You will need:

  • 1 kg of cottage cheese;
  • 8 eggs;
  • 300 g sugar;
  • 4 tbsp. l. semolina;
  • 1 bag of vanilla sugar;
  • 100 g of chocolate.

It is usually recommended to take cottage cheese with high fat content for Lviv cheesecake, due to which the dessert will become more juicy. But from my own experience, I can say: even from low-fat cottage cheese, the result will be excellent, because the recipe uses semolina and a lot of eggs.

  1. First of all, pass the curd through a meat grinder. It is best to do this twice so that the product reaches a delicate consistency. Or place the grill with the smallest holes on the meat grinder.

  2. Add the egg yolks to the cottage cheese (set aside the whites for now), mix thoroughly.

  3. Add semolina, vanilla sugar. Stir again until smooth.

  4. Now take the whites and beat them at the maximum speed of a mixer or blender until a firm, dense foam. Add sugar gradually and beat for another 5 minutes.
